In case a removable cutting knife is used, it is attached in connection with this opening to one of the surfaces which form the ditch-shaped section. This means that the knife forms a certain smaller angle to the plane of the cutting disc. The angle can be typically 10 - 20 degrees.
Such an arrangement means that it is not possible to cut thin slices of certain vegetables without the slices being deformed and of a slice having an uneven thickness. Such a cutting result is unacceptable.
The present invention solves this problem.

Figure 1 shows a cutting disc 1 according to Swedish patent 531,916, intended for use in a cutting machine. The disc 1 is substantially planar and is associated with an axial direction A, an angular direction V and a radial direction R. Figures 2 and 3 show the same cutting disc in two other views. The reference numerals are the same in all these figures.
The disc 1 comprises a peripheral edge 2 extending in the angular direction V around the axis 1 of the disc 1 and a centrally arranged, through hole 3. The dimensions and shape of the hole 3 are adapted to be able to engage in the existing attachment for a cutting disc of a known cutting machine (not shown), the cutting disc 1 is intended for use.

The ditch-shaped section comprises a sloping part 5. Next to the sloping part 5 there is arranged an opening 6, which extends substantially in the radial direction R and through which cut-off food is passed when using the cutting machine.
Along a free edge of the opening 6 there is a cutting edge arranged to support a replaceable cutting member in the form of a blade-shaped knife according to the invention. The knife is arranged to be mounted on the cutting disc 1 by means of conventional fastening means 4, for example in the form of internally threaded heels, which are arranged to be able to engage in externally threaded screws which in turn are arranged to be able to retain the cutting member on the sloping part 5. The sloping part 5 comprises at least one surface section which slopes along the angular path V of the disc 1 so that a point on the sloping surface section which is further away from the cutting edge in the angular direction V is also further away from the main plane of the disc 1 in the axial direction A.
When used in a cutting machine, the disc rotates in the angular direction V, preferably at a speed between 100 and 3000 revolutions per minute. Foods to be decomposed, such as vegetables, meat, etc., are fed in the axial direction A in the direction of the disc 1. Due to the rotation of the disc 1, the foods are pressed against the cutting edge and cut by it. Food thus passes through the opening 6 in connection with them being cut apart by the cutting edge. The opening 6 can be arranged with different height and width, depending on the purpose of the cutting disc 1. For example, different additional cutting devices can be arranged along the cutting disc 1 in the cutting program of the cutting machine, so different thicknesses of the disintegrated parts of food may be desirable. . Such considerations are thus reflected in the choice of shape and dimensions of the opening 6.
Conventional cutting discs are usually made of cast light metal. The present cutting disc 1 is made of relatively thin stainless steel, between 1 and 2.5 millimeters thick, preferably about 1.5 mm.
The above is stated in the above-mentioned Swedish patent.
As mentioned above, a conventional knife mounted on the cutting disc causes the knife to form a certain angle to the plane of the disc, which in turn means that it is not possible to cut thin slices of certain vegetables without the slices being deformed and of a slice having an uneven thickness. .
According to the present invention, the knife 10 is bent along a bending line 11 running in the longitudinal direction of the knife. The fastening means of the knife 10, which consist of holes 12-14 in which screws run which are screwed into the cutting disc 1, are located in a portion 15 of the knife 10 on one side of the bending line 11. The edge 16 of the knife 10 is found running along the free edge of the knife in one portion 17 of the knife on the other side of the bending line 11.

The latter features are illustrated in Figure 8. Figure 8 shows a part of the plane of the cutting disc 1 and a part of the sloping part 5 where the knife is attached.
Through this design of the knife, the portion 17 of the knife where the edge is located will thus be parallel to the upper surface of the cutting disc. As a result, a vegetable which is cut will abut against the portion 17 during the cutting, which thereby forms a support for the vegetable, which is pressed down from above against the cutting disc by a feeding device. Figure 8 illustrates a vegetable 18 with dashed lines. A partially cut-off part of the vegetable 18 is designated 19. The direction of transport of the cutting disc is indicated by the arrow 20.
Due to the described design of the knife, it is possible to cut thin slices of certain vegetables, for example tomatoes, without the slices becoming deformed and from a slice having an uneven thickness. On the contrary, the slices become evenly thick even when cutting soft vegetables. Furthermore, the discs can be made thin.
It is preferred that said portions 15, 17 of the knife on both sides of the bending line 11 are flat.
It is further preferred that the knife 10 be made of stainless steel.
According to a preferred embodiment, the knife 10 is arranged to abut against and be attached to the underside of the sloping part 5.
